Greek Kasseri Cheese

Saganaki help...please ?

I have the cheese kasseri and I plan on making saganaki (greek flaming cheese). The problem is, I'm not sure if I should use brandy (brandy might make it taste weird) the recipe calls for brandy, to light the cheese on fire but I'm not to sure. Is there any other liquors I can use, preferably something greek.

If you don't have brandy you will be fine to use ouzo. All you have to do is cut the cheese into slices, about a half an inch, chill the slices in ice water, pat dry then dust with flour. For each slice of cheese melt 3 tablespoons of butter until it sizzles but it doesn't brown. Add cheese and saute quickly. For each serving squeeze a half a lemon into the pan, the add a little ouzo. Ignite. Serve when the fire dies down.
